Green bananas are a source of resistant starch. After bananas ripen, these starches turn to sugar and bananas develop the sweet taste we usually associate with this fruit, while they are green they are low in sugar and high in resistant starch. Resistant starch is a form of fibre that good bacteria in the digestive system use as food, it is what we called a prebiotic, and while in this state, the starches are not absorbed by the body and turned into sugar like other starches and carbohydrates are.
When provided with adequate food, good bacteria produce compounds that help with gut health, a healthy immune system and all the other benefits associated with a healthy microbiome. Using bananas when they are green provides this food in the right form for the good bacteria without absorbable sugar and starch, as dogs have no biological requirement for these forms of carbohydrate in their diet.
